Where the Spirit Meets the Wood

There’s a lot that goes into making great whiskey, but one of the most important ingredients isn’t grain or yeast at all. It’s the barrel.

Great whiskey is born in the grain but raised in the wood. To get those deep notes of caramel and spice just right, we entrust our Harvest Select and Straight Bourbon to the precision of a #3 Char American Oak barrel from Kelvin Cooperage.

So what does that mean and why does it matter? 

When a barrel is charred, the inside is exposed to flame, creating a layer of carbonized wood. A #3 char hits a balance we really love. It’s deep enough to caramelize the oak’s natural sugars and develop richness, but not so heavy that it masks the character of the whiskey itself.

That charred layer works hard during aging. It naturally filters the spirit and helps mellow rough edges, while the toasted oak beneath releases flavors like vanilla, caramel, baking spice, and a hint of smoke. As Montana’s seasons shift, the whiskey expands into and contracts out of the wood, pulling those flavors into every drop

Our Straight Bourbon, aged in the same #3 Char barrels, leans into deeper caramel, vanilla, and spice while still letting the grain and fermentation shine.
